Snap Pea Bruschetta

This is an amazing recipe that I first had a version of at a favorite restaurant called Region. The restuarant no longer exists but the recipe and memories live on. The measurements are not exact, so make your own creation. You can't screw it up.



1 Baguette, sliced about 3/4"

Goat Cheese

Sugar Snap peas, sliced

Pine Nuts

olive oil

pepper

garlic clove, peeled with tiny bit cut off end


Toast bread slices under the broiler or in a 350 degree oven until lightly golden brown. When the bread comes out of the oven, lightly brush on olive oil and then rub with the garlic clove onto the bread. Spread goat cheese over the bread, as much as you like. Sprinkle with some pepper. Top with sliced sugar snap peas and pine nuts. Enjoy!!
