3/4 c. sugar
3 eggs
3 egg yolks
2 tsp. vanilla
1 14oz. can sweetened condensed milk
1 3/4c. milk
3 oz. cream cheese, softened to room temp.
Place the sugar in a small skillet over medium-high heat and stir while it liquefies. Allow the sugar to boil and turn a light walnut brown, stirring occasionally. Watch carefully so that it does not burn!!
Pour the caramel into the bottom of a 9" glass pie pan (Pyrex), and working quickly spread it evenly with a rubber spatula over the bottom of the pan.
Preheat the oven to 350 degrees. Place eggs, egg yolks, vanilla, milks and cream cheese in a blender or food processor and process for about 5 minutes.
Pour the mixture into the Pyrex pan and then place that pan into a larger rectangular pan and put it in the center of the oven. Pour boiling water into the larger pan until it is 1/2 way up the sides of the pan. Bake for 1 hour 10 minutes., or until a knife inserted in the center comes out clean. Watch carefully and cover the flan loosely with foil if the top seems to be getting too brown (I usually have to do this).
Remove from the oven and allow to cool to room temperature, then cut around the edges and invert onto a deep-sided serving plate (the caramel syrup will run out over the top). Serve each slice with some of the caramel syrup.
I always make the flan a day ahead (can make up to 3 days ahead) and keep it covered with plastic wrap in the pan. Don't invert until you are serving it. It is much creamier if made the day ahead and chilled. Serves 6.
