Company Carrots

2 1/2 lbs. carrots, peeled and cut into 4" segments
1/2 c. mayonnaise
1 TB. minced onion
1 TB. prepared horseradish
1/4 c. saltine crackers, crushed
2 TB. butter
1-2 TB. fresh parsley, minced
salt and pepper

Cook peeled carrot segments in salted water until tender, but don't overcook. Drain and save 1/4 c. of the cooking water. Cut the carrots lengthwise into narrow strips. Arrange them in rows in a buttered 9x9 baking dish.
Combine cooking liquid (1/4c.) with the mayo, onion, horseradish, salt and pepper. Sauce should be pretty thin (you should be able to pour it, if not add a little more water). Pour sauce over carrots, sprinkle cracker crumbs on top, dot with butter and sprinkle with parsley. Bake at 375 degrees for 20 minutes. Serves 8.
*even people who hate carrots love these!
