Epic Chicken Flat Bread

My favorite recipe from Epic Restaurant in SLC.

Pizza dough, store bought or ChesseBoard recipe from blog
White Cheddar Cranberry cheese
4 chicken breasts, boneless, skinless
Pecans
Parsley Aioli

Salt and pepper chicken breast. Heat pan over medium height heat. Add olive oil and then chicken. Cook about 10-15 minutes until cooked through, flipping half way through. When cooked, set aside
on a cutting board to rest. When rested slice thinly.

For flat bread, heat a griddle to med/high heat.  Make golf ball size pieces of dough. Roll each small ball thinly and place on griddle to cook, flipping when cooked on first side. Keep warm in oven until ready to serve.
Optional, cook dough according to directions pizza style. I like thin individual breads for people to make themselves but it could be cut into personal sizes.

Parsley Aioli

2 cups canola oil
1 bunch flat leaf Italian parsley
1/8 cup white balsamic vinegar
1/4 tsp. salt
1/4 tsp. pepper
1/4 cup egg yolk
1-3 garlic cloves depending on your taste
1 TB sugar

In a blender or food processor blend everything well except the oil. Slowly add the oil in through the top area to blend smoothly and completely. It should be on the thick side like a mayonnaise.

To make flat breads:
Top bread with aioli. Layer on chicken, cheese and pecans.

Enjoy!

Pour cranberry sauce mixture over meatballs. Cover and simmer, stirring occasionally for 20 minutes. This dish is best if made in advance and reheated.

Tomatoes and Chèvre

Ok, seriously, just try it and you won't be able to stop!  Amazing!!!!

1TB minced Garlic
1/2 cup Olive Oil
2 lbs. Cherry Tomatoes
4 oz. soft, mild chèvre (goat cheese)
1/2 cup Fresh Basil, slivered
2 baguettes, sliced and lightly toasted
Salt and Pepper to taste

Preheat oven to 400 degrees. Cut tomatoes in half. Put tomatoes, garlic and oil, salt and pepper in a shallow dish and mix together and put in the oven. Bake 10 minutes. Sprinkle chunks of cheese and basil on top and stir gently. Serve with the toasted bread slices.

This makes a ton, which is entirely possible to eat, but could easily be cut in half to give yourself some self control. It is a meal in itself.

Grilled Shrimp

olive oil
cirtus juice (lemon or lime)
garlic, minced
chili oil
salt and pepper

Marinate shrimp in this mixture for 10-20 minutes. Grill.
Can put on skewers if that makes it easier to grill.

Hot Artichoke Dip

2 8oz. pkgs. cream cheese
1 cup parmesan cheese
1 cup mayo
1 14oz. can artichoke hearts, chopped with all water squeezed out
1/4 tsp garlic powder.

Mix everything together. Put in bakeware. Bake at 350 degrees for 30 minutes.
Serve with bread chunks or crackers.
Can also add 1 pkg. chopped spinach all water pressed out.

This is also amazing with the leftovers spread onto an uncooked pizza dough. Bake in 400 degree oven until bubbly and dough is cooked through!! So good I can't even tell you. Just ask someone I've made it for!

White Bean Dip with Pita Chips

This is so Fantastic!! Easy to double to serve for a party.

1 (15 oz) can cannellini beans, drained and rinsed
2 garlic cloves
2 TB. fresh lemon juice
1/3 c. olive oil, plus 4 TB.
1/4 c. (loosely packed) fresh Italian parsley leaves.
salt
pepper
6 pitas
1 tsp. dried oregano

Preheat oven to 400 degrees.

Place the beans, garlic, lemon juice, 1/3 c. olive oil and parsley in the food processor. Pulse until mixture is coarsely chopped. Season with salt and pepper to taste. Transfer to a small bowl.

Cut each pita in half and then into 8 wedges. Arrange pitas on a large baking sheet. Pour the remaining oil over the pitas. Toss and spread out evenly. Sprinkle with oregano, salt and pepper. Bake for 8-12 minutes, or until toasted and golden in color.

Serve pitas warm or room temperature alongside the bean dip.

*can also but pita chips, but these are so easy to make and so delicious.

Bruschetta

So Yummy!

Baguette, sliced

tomatoes, chopped

onion, chopped

garlic, chopped

basil, chopped

salt and pepper

olive oil

Toast baguette slices under the broiler or in a 350 degree oven until lightly golden brown. Heat a pan on medium heat and heat some olive oil. Add in the onion and cook until translucent. Add the garlic and season with salt and pepper. Cook a few more minutes until garlic softens a little. Remove from the heat and combine in a bowl with tomatoes and basil. Check seasoning. May need to add a little more olive oil. Top bread with tomato mixture. Serve immediately or have tomato mixture on the side.

Snap Pea Bruschetta

This is an amazing recipe that I first had a version of at a favorite restaurant called Region. The restuarant no longer exists but the recipe and memories live on. The measurements are not exact, so make your own creation. You can't screw it up.

1 Baguette, sliced about 3/4"

Goat Cheese

Sugar Snap peas, sliced

Pine Nuts

olive oil

pepper

garlic clove, peeled with tiny bit cut off end

Toast bread slices under the broiler or in a 350 degree oven until lightly golden brown. When the bread comes out of the oven, lightly brush on olive oil and then rub with the garlic clove onto the bread. Spread goat cheese over the bread, as much as you like. Sprinkle with some pepper. Top with sliced sugar snap peas and pine nuts. Enjoy!!
