Greek Turkey Burgers

1-1 1/2 lbs. ground turkey

1 c. feta cheese

1 tsp. oregano

1 tsp. italian seasoning

1 tsp. parsley

1 tsp. basil

1 tsp. onion powder

1 tsp. garlic powder

1 onion, chopped

3-6 cloves garlic, minced

2 TB. olive oil

1/2-1 c. sundried tomatoes, chopped (optional)

salt and pepper


Tziki Sauce:

2 medium cucumbers, peeled, seeded and diced

1 lemon, juiced

1 clove garlic, grated

1 TB. salt

1 TB. fresh dill

salt and pepper

3 c. plain greek yogurt (regular yogurt works as well)


Pita Bread, each cut in half

Tomatoes, sliced

red onion, thinly sliced


In a skillet heat oil and cook onion and garlic until softened. Let cool. Mix all remaining ingredients in a large bowl. Do not over mix. Form into patties. I make football/oval shaped patties to fit in the pitas. Cook patties in a pan, or on a griddle until fully cook through. Warm pitas and place patties inside. Top with tomatoes, onions and sauce.


Sauce:

Place cucumbers and salt in a strainer. Let sit for about 1/2 hour (this removes moisture from the cucumbers). Dry cucumbers off with a paper towel to remove more moisture. Place in a bowl and mix with remaining ingredients. Can also make in a food processor for a smoother sauce. I like to keep it kind of chunky.
