Potato Croquette

1 lb. potatoes
1/4 lb. ground beef
1/2 onion
1 egg
1/2 tsp. salt
pepper to taste
vegetable oil for frying
flour
panko (japanese style breadcrumbs)

Peel and cut potatoes into medium chunks. Boil the potatoes unit soft. Drain and mash potatoes. Mince onion and saute in a frying pan. Add the ground beef and saute. Mix mashed potato, onion and beef in a bowl. Season with salt and pepper and mix well. Form into oval-shaped balls. Coat each piece with flour. Dip in the beaten egg. Coat with panko. Fry in 350 degree oil until golden brown.
