Boston Clam Chowder

1 cup minced leeks
1 cup minced onion
1 cup diced celery
2 cups diced potatoes

Combine in a saucepan. Barely cover with water. Simmer 20 minutes to tender.

3/4 cup butter
3/4 cup flour
1 qt. milk
1 1/2 tsp. salt
1/4 tsp. thyme
Fresh ground pepper
1/2 tsp. Tabasco sauce
2 1/2 oz clams with juice

Melt butter and add flour to make a roux. Add milk and cook to make a white sauce. Add salt, thyme, pepper, Tabasco, and clams with juice, untrained to cooked vegetables. Heat thoroughly and serve.
